I love all properly prepared olives, which means they are preserved in brine (occasionally oil) and not vinegar. That eliminates emphatically all canned olives.

There are 2 olives I love. One is a big green with pit, its in a very light brine, not salty at all, a real fruity tasting olive. I'll get the name later. I;'ve seen them in a clear bine, all stay light green color and a slight brown color brine, a few begin to take on a brown color.
The second olive i love is a olive stuffed with sundried tomato. Previously the sundried was too salty, now they've reduced the salt. Unreal flavor.
Both can be found at Whole Foods, but I know your local italian deli has them also.
I also do not like any kind of black olives.
Salad: thin sliced romane heart/french sheep feta/thin sliced red bell peper/thin sliced portabello mushroom/thin sliced red onion/thin sliced southern louisiana creole tomato/YOU CAN ALSO DICE UP THE THIN SLICES OF VEGGIES (not the lettuce), I like the whole foods blue cheese dressing.....lets see what are we missing....the olives of course

The best olives are the big, black, Greek Kalamata olives. Lots of times, its good to have a salad of just the olives, tomatoes, red onion, feta cheese, oil and vinegar dressing, and some chopped parsley overall.Ralph wrote:A salad without black olives is like a day without listening to Dittersdorf.
I am not terribly fond of olives in just any salad, but the above one, with 5 parts olive oil to 1 part balsamic vinegar, is good. Oh, and its good to prepare the balsamic vinegar by keeping a long stalk of tarragon steeping in it for 3 months or so before use.
