The funny thing about Christmas is that, although it is musically the greatest occasion, exceeding even Easter, It has an unusually limited repertory. I play Daquin every year, because I have a peculiar organ and because there is little else non-virtuosic in the realm of Christmas organ music. (I am certainly not going to attempt Bach's variations on Von Himmel hoch, though I could manage it with practice.)
Christmas Eve, which I face tomorrow night, is a nightmare for me. It would take six wild stallions to drag me away from my job, but what the Anglo-Catholics are pleased to call Midnight Mass is an ordeal I can barely put up with for the appreciation of the rest.

There's nothing remarkable about it. All one has to do is hit the right keys at the right time and the instrument plays itself.

A little-known Christmas repertoire, at least in the U.S., the pastoral masses of Diabelli, Kempter, and several Czech composers are unpretentious, tuneful, and cheerful, as befits the shepherds of the Christmas story. Here's one of them, by Jakub Jan Ryba, a contemporary of Mozart; the text is in Czech.

These things as you point out yourself are trifles, as is the better-known music of Charpentier. I certainly do not! I said that Ryba's shepherd's mass and others like it are "unpretentious, tuneful, and cheerful," but for me that does not make them things of little value or importance (dictionary definition). How important they are is a matter of music history and Christian worship in their lands of origin; I haven't raised that issue because I have no answer for it and, frankly, it doesn't matter to me. But to dismiss cheerful music as trivial, especially when it celebrates the most cheerful holiday of the Christian calendar and also the secular calendars of many of us (though not you, as you've said), is something I'd never do. There are some other Christmas works of note, you may dismiss the Czech tunesters as resembling a desert, how about Schutz and Praetorius?

The Graupner Christmas oratorio? It´s gorgeous, really beautiful, though like Bach´s it´s a series of Christmas cantatas rather than a proper oratorio, but the music and the performance are extraordinary. Warmly recommended.
